§ 11.6.5. Hot storage compartments.

- Each hot holding unit used to store and hold potentially hazardous food shall be capable of maintaining foods at or above 140 degrees Fahrenheit. Each hot holding unit shall be fitted with an accurate temperature measuring device. (Ord. No. 1080, § 4, Exh. A.)
