§ 11.6.4. Cold storage compartments.

  • Each cold storage compartment used to store and hold potentially hazardous food shall be capable of maintaining foods at or below 41 degrees Fahrenheit. Each freezer shall be capable of maintaining frozen foods at or below 5 degrees Fahrenheit. Each cold storage compartment shall be fitted with an accurate temperature measuring device. (Ord.
